IN MY KITCHEN: Mango Salsa

Since I know everyone celebrated Cinco de Mayo yesterday, here is a great way to keep on celebrating!

MANGO SALSA

INGREDIENTS:

1 Large Mango

1 Small Red Bell Pepper

1 Small Red Onion

Cilantro

1 Jalapeño

1 Lime

DIRECTIONS:

Peel and dice the mango in to chunks. Finely dice the red bell peppper and red onion. Slice open the jalapeño and deseed. Then finely dice the jalapeño. Finely chop the cilantro. Combine all of these ingredients in to a bowl. Squeeze the juice of one lime and mix. Enjoy with some great corn tortilla chips and a margarita!

HAPPY HOUR: Easiest Corona Margarita

David and I are in Texas this weekend. Our final trip back before we officially move back home. We miss a lot of things about Texas, great tex-mex, margaritas, warm weather! I told David this weekend I need to sit on a patio and drink a margarita, so here is my Easiest Margarita recipe in case any of you want to join in the fun!

INGREDIENTS:

1 can frozen limeade
1 empty limeade can Tequila
1 empty limeade can of water
1 bottle Corona

Mix together in a pitcher and pour over ice! Enjoy!
